5 Amazing Summer Recipes

 Looking for fun and yummy summer recipes? Here are five of my favorite summer recipes from couplescooks.com and allrecipes.com. The recipes are guacamole, watermelon slushies, chicken tortilla soup, fresh pico de gallo, and caprese salad. First we’re going to start with the guacamole.

🥑 Guacamole by Sonja Overhiser


3 avocados- peeled, pitted, and mashed

1 lime

1 teaspoon salt 

½ cup diced onion 

3 tablespoon chopped fresh cilantro

2 tomatoes, diced

1 teaspoon minced garlic

1 pinch ground cayenne pepper (optional)

How to make it: In a medium bowl, mash avocados, lime juice, and salt together. Then mix in onion, cilantro, tomatoes, and garlic. Stir in cayenne pepper. After that, you’re all done and enjoy your guacamole!


🍉 Watermelon Slushie by Sonja Overhiser 


Ripe watermelon



How to make it: All you have to do is blend these ingredients together until they form watermelon juice, then add ice until a slushie texture forms. Now enjoy your yummy watermelon slushie.


🍲 Chicken Tortilla Soup by Star Pooley


1 Onion, chopped 

3 cloves garlic, minced

1 tablespoon olive oil 

2 tablespoon chili powder

1 teaspoon dried oregano 

1 (28 ounce) can crushed tomatoes

1 (10.5) can condensed chicken broth

1 ¼ cups water

1 cup whole corn kernels, cooked

1 cup white hominy 

1(4 ounce) can chopped green chile peppers 

1(15 ounce) can black beans, rinsed and drained 

¼ cup chopped fresh cilantro 

2 boneless chicken, cooked and cut in bite-sized pieces

Crushed tortilla chips

Sliced avocado 

Shredded Monterey Jack cheese

Chopped green onions 

How to make it: In a medium pot heat some oil over medium heat. Saute onion and garlic inside the oil until it’s soft. Then stir in the chili powder, oregano, tomatoes, broth, and water. Bring it to a boil and simmer it for 5 to 10 minutes. Then stir in corn, hominy, chiles, beans, cilantro, and chicken. Simmer that for 10 minutes again. Put the soup in a bowl and top it with crushed tortilla chips, avocado slices, cheese, and chopped green onion. You are allowed to refrigerate it.


🍅 Fresh Pico de Gallo by Sonja Overhiser


1½ pounds ripe red tomatoes

½ cup minced white onion 

1 to 2 jalapeño peppers, seeds removed 

¼ cup packed finely chopped cilantro 

¼ teaspoon cumin

2 tablespoons lime juice

½ teaspoon kosher salt

How to make it: Dice the tomatoes and remove the core and seeds. Finely chop the onion and remove the seeds from the jalapeño peppers then chop them. Finely chop the cilantro. Then mix the tomatoes, onion, jalapeño peppers, cilantro, cumin, lime juice, and kosher salt in a bowl. Serve immediately and enjoy your dish. You can store it for a few days in the refrigerator. 


🥗 Caprese Salad by Sonja Overhiser 


6 to 8 heirloom tomatoes, of different colors and sizes  

4 ounces fresh mozzarella cheese or burrata cheese 

1 handful basil leaves

Extra-virgin olive oil 

Balsamic reduction(optional)

Sea salt 

Fresh ground pepper

How to make it: Slice tomatoes and place them on a plate. Top the tomatoes with mozzarella cheese and basil leaves. Then drizzle with extra-virgin olive oil. If desired, drizzle with balsamic reduction. Top it of with sea salt and fresh ground pepper. Serve immediately and enjoy. Doesn’t save well, don’t try to refrigerate it.
